I came up with this recipe when I was trying to recreate the Factor recipe. I have added a variation with frozen artichoke hearts too if you want some extra flavor
2 chicken breasts filleted so they are not too thick
1/4 cup white wine
1/2 cup chicken stock
1/2 block of cream cheese
1/2 cup Monterrey cheese
1 cup of frozen spinach or 1 bag of fresh spinach
1 cup of frozen artichoke hearts (if desired)
1/4 cup of sun dried tomatoes (if desired)
Sprinkle Salt pepper and garlic powder on the chicken breasts
sear chicken until golden brown on the outside and remove from heat
Heat chicken stock, and white wine in pan, saute onion and garlic, add spinach (and artichoke and sun dried tomatoes if desired)
Add chicken back into pan and cover and cook on medium for 25-30 minutes until cooked through
In another pan or microwave, melt cream cheese and Monterey cheese together
Pour cheese over chicken and serve with cauliflower rice
For Ninja Foodie

Heat chicken stock, and white wine on high, saute onion and garlic, add spinach (and artichoke and sun dried tomatoes if desired)
Add chicken back into Foodie and bake on medium for 20-30 minutes or until cooked through
Microwave cream cheese and Monterey cheese until melted together
Pour cheese over chicken and serve with cauliflower rice
